In the cellar the wine is born and not made. Its quality, its characteristics are the result of small everyday choices. All the grapes, have certified organic and Demeter, are harvested by hand at the optimum moment of maturity, forcing sometimes perform several steps in the vineyards. The fermentations depart spontaneously (yeasts) and occur in vats 40 hl oak truncated cone, where the temperatures are only partially controlled. At the end of this phase, generally lasting 15 days, in the case of Amarone more than a month, after successive decanting wines, except for the Court Sant'Alda Soave, before bottling they are aged in different woods essence, capacity and age for a period ranging from 6 months to 4 years.
